Norman Doidge recently published a great book on the brain. It is called 'The Brain's Way of Healing: Remarkable Discoveries and Recoveries from the Frontiers of Neuroplasticity'. One chapter discusses the Feldenkrais Method and the work of Anat Baniel. This chapter has just been put out online so if you want to read it go here
